    Fine dining in Mauritius does not look like fine dining in Paris or Singapore, and that is the point. The best rooms here are old sugar estate houses, converted colonial residences and hotel restaurants that open onto a lagoon, where a jacket is optional but the kitchen still works in courses. What you are paying for is a longer meal: bread and butter made in-house, a wine list with more than three whites, waiters who clear and pour without being asked, and a chef who changes the menu when the fishermen bring something different.

    The island splits fairly neatly. Bel Ombre and Chamarel, in the south, have the grand rooms — plantation architecture, gardens, mountain views and menus built around Mauritian produce cooked with French technique. The west, around Tamarin and Black River, is where the chef-led kitchens sit: smaller dining rooms, open passes, Italian and Mediterranean cooking, and prices that reward booking early. In the north and east, the fine dining is mostly hotel-adjacent — grills and seafood restaurants on the water at Grand Gaube, Trou aux Biches and Trou d'Eau Douce — while Balaclava and the centre keep a couple of old houses for a shorter drive.

    Practical notes. Reserve, always: several of these kitchens seat fewer than forty covers and cook to order, and Friday and Saturday fill days ahead. Service usually starts at 19:00 and last orders land around 21:30, so book early rather than late. Budget roughly Rs. 2,500-5,000 for two people with a starter, a main and wine, and more at the estate restaurants and hotel grills. Smart-casual is fine almost everywhere; only the estate dining rooms lean formal.
