8 Healthy Breakfast Ideas to Start the New Year Right!

Breakfast is the most important meal of the day yet it is often rushed or skipped altogether. Mornings can be hectic, especially on weekdays when you keep hitting the snooze button and struggle to make it to work on time. This makes it difficult to prepare a healthy and hearty meal. In these cases, your go-to is normally a bowl of bland cereal or more commonly a simple espresso.

This is, however, one of the worst ways to start the day. After a long night of rest, your body needs fuel to power through the packed day you have planned ahead at work.

To help you start your day off right, here’s a list of 8 quick and healthy breakfast ideas.

1) Tropical Smoothie Bowl

The smoothie bowl is not only fresh and light but also full of flavour and nutrients. Put your favourite fruits in a blender and blitz until smooth and thick before refrigerating for 24 hours. You can add toppings before serving for more flavour and extra nutrients. It works especially well not just for breakfast but can also be eaten as a snack or at any time of the day.

2) Hash Breakfast

Hash is known for its corned beef iteration, with a couple of fried eggs on top. But it doesn't necessarily need to include corned beef. Leftover cooked lean meat or poultry are perfect to use as a base for hash. Next, you can add potatoes or other vegetables and adjust the seasoning after mixing all the ingredients together.

3) Smoky Red Pepper Spicy Egg Toast

This is quite a traditional snack in many parts of Italy but it also makes for an excellent start to the day by adding a kick of spice to your mornings. Spread paprika and roasted red pepper hummus onto your egg toast, without forgetting to put grilled tomatoes on top. The most important thing is to season generously.

4) Dark Chocolate Banana Muffins

These delicious muffins are really simple to make and constitute a very healthy and filling breakfast. To make it even better, you can substitute oil with Greek oil to lighten up the muffins and keep them moist as well.

5) Avocado Toast with Egg

This protein-packed breakfast is a classic and very easy to make. Top two lightly toasted slices of whole-grain bread with mashed avocado and season with salt and pepper, before layering on two sunny-side up eggs for a healthy dose of protein. Do not forget a sprinkle of green onions and freshly cracked pepper to top it all off.

6) Herb omelette with fried tomatoes

An omelette is one of the ultimate quick breakfasts. However, depending on the filling you can also end up with something really flavoursome and delicious. Break the eggs into a bowl, add a good pinch of sea salt, herbs, freshly ground pepper and mix everything together. Swirl the eggs around for 30 seconds or so in a non-stick frying pan before serving with fried tomatoes.

7) Poached Eggs with Mushrooms and Tomatoes

Sautéed tomatoes and golden-brown mushrooms amp up delicately poached eggs in this comforting breakfast. To help the egg whites set, add a splash of vinegar to the poaching water. To serve, sprinkle with grated Parmesan cheese, salt and pepper, and fresh chives. It's hearty enough to make for dinner, too.

8) Oats & Fruits

Oatmeal is one of the simplest and most satisfying morning meals. Oats include plenty of vitamins, antioxidants and fibre, hence bringing you an abundance of health benefits. Eaten in the morning, they not only warm you up for the day but also keep you full until lunch time. Top your oatmeal with your favourite fruit to make breakfast even more nutritious and filling.
