You find it in small family dining rooms, beach shacks and table d'hôte houses far more often than in formal restaurants.

    The best of it is served at lunch. Table d'hôte kitchens in Chamarel, the Savanne villages and along the east coast cook to booked covers, so calling a day ahead is normal. On the coast, the same dishes turn up in simpler beach kitchens at half the price.
