Suji (Semolina Halwa)

    Suji/ Semolina Halwa is a classic indian semolina pudding made with ghee and dry fruits. It is a traditional but popular sweet dish in Mauritius.

    Ingredients

    • 3 Cups Semolina (gréo) 500g
    • 1.5 Cup Sugar
    • 1.5 Cup Milk Powder
    • 6 Tbsp Ghee (clarified Butter)
    • 1 Tsp Cardamom
    • 2 Cinnamon Sticks
    • Yellow Food Colour (optional)
    • 1 Tbsp Vanilla Essence
    • Dry Raisins
    • Sliced Almonds

    Preparation

    1. Dissolve 1.5 cup of sugar and 1.5 cup of milk powder in 3 cups of water
    2. Add 1 tbsp of vanilla essence and a pinch of yellow food colour
    3. Mix well and set aside
    4. Heat 1 tbsp of ghee over medium low heat in a cast iron wok
    5. Add semolina and mix together
    6. Keep stirring and roast over medium low heat for 7 minutes
    7. Remove and set aside
    8. Heat 4 tbsp of ghee in the cast iron wok over medium high heat
    9. Add raisins, cinnamon sticks, cardamoms and sliced almonds
    10. Fry for 1 minute and add the roasted semolina
    11. Mix to combine and add liquid milk
    12. Keep stirring over medium high heat until water is dried and halwa texture is formed (about 5 minutes)
    13. Finally melt 1 tbsp of ghee on the halwa and mix together
    14. Serve, garnished with the almonds.
