    Rice and Noodle Recipes

Briani, bol renversé, fried rice, mine frite and the pasta dishes beside them.

Rice and noodles carry most Mauritian meals. A briani for a wedding, bol renversé for a Sunday lunch, mine frite when there is not much in the fridge, and plain rice under everything else the rest of the time.

This page collects the rice, noodle, grain and pasta dishes in the collection, including the lentil and bean recipes that traditionally sit beside a plate of rice.

Cooking rice and frying noodles the Mauritian way

For fried rice and mine frite, cook the rice or noodles the day before and chill them — fresh, warm starch turns to paste in a wok. Get the pan hotter than feels sensible, cook in two batches rather than one crowded one, and add soy and oyster sauce at the very end so they caramelise instead of steaming.
