Hummus is a delicious dip made from chickpeas blended with tahini, lemon juice, and garlic. It is popular in the Middle East but is loved around the globe, even in Mauritius.
Ingredients
- 1 clove garlic
- 1 (19 ounce) can chickpea, half the liquid reserved
- 4 tablespoons lemon juice
- 2 tablespoons tahini
- 1 clove garlic, chopped
- 1 teaspoon salt
- black pepper to taste
- 2 tablespoons olive oil
Preparation
- Boil the chickpeas for 15 minutes (yes, even if canned). Tip: Remove the chickpea skin for creamier hummus.
- In a blender, chop the garlic. Add the chickpeas, reserving about a tablespoon for garnish. Add reserved liquid, lemon juice, tahini, and salt. Blend until creamy.
- Transfer to a serving bowl. Sprinkle with pepper and pour olive oil over the top. Garnish with reserved chickpeas.
