Eggplant Chutney

    For a unique and flavoursome condiment, this delicious Eggplant Chutney is guaranteed to satisfy the tastebuds. Mauritians love it plus it's easy to make.

    Ingredients

    • 1 large eggplant
    • half an onion
    • 4 green chillies
    • 3 tablespoons of vinegar/lime juice
    • garlic
    • 1 tablespoon of olive oil
    • Salt
    • Coriander

    Preparation

    1. Preheat oven to 250 degrees for 10 minutes before putting the eggplant in a dish and bake it for 35 minutes.
    2. Meanwhile, finely chop the onion, garlic.
    3. Next, add the vinegar, oil and salt in the onion and garlic mixture and let it marinate while the eggplant is in the oven.
    4. Once cooked, remove the eggplant from oven and let cool slightly before cutting it into 2 lengthwise and removing the pulp with a spoon.
    5. Put the pulp in a bowl, mash it a little with the spoon before adding the onion garlic mixture, chillies, vinegar/lime juice and mix well.
    6. Add freshly chopped coriander to garnish
    7. Your Brinjal Chutney is ready. Serve it with rice, lentils and fried fish.
