A good cup of tea at the end of the afternoon becomes a small feast when accompanied by a slice of this delicious Tarte à la Banane. Indeed, very popular with young and old alike, this Tarte à la Banane is a very popular pastry in Mauritius. Dessert or afternoon snack, for me it's just a paradise at any time in the mouth.

    Recipe Ingredients

    Servings:
    4

    Instructions

    Caramelized banana

    1. 1

      Peel and slice the bananas.

    2. 2

Place the banana slices in a bowl and add 1/2 cup brown sugar.

    3. 3

Mix well until the sugar melts.

    4. 4

Transfer to a thick-bottomed pan and cook over medium heat.

    5. 5

Mash the bananas and stir occasionally for about 20 minutes.

    6. 6

Add 1/2 cup water and stir well.

    7. 7

Remove from heat and set aside to cool.

    Crust

    1. 1

While the banana filling cools, preheat the oven to 170°C.

    2. 2

In a bowl, combine 400g plain flour and 1/4 teaspoon salt.

    3. 3

Cut 175g cold vegan margarine into the flour, folding until it resembles fine breadcrumbs.

    4. 4

Make a well in the centre and add 100ml cold water.

    5. 5

Work the mixture until a smooth dough forms, resembling the texture of bread.

    6. 6

Divide the dough into 1/3 and 2/3 portions and refrigerate for about 30 minutes.

    7. 7

Sprinkle the work surface with a little flour.

    8. 8

Roll out the larger dough portion to about 4mm thickness, large enough to fit a 28cm pie mould.

    9. 9

Roll the dough loosely around the rolling pin and transfer it to the mould.

    10. 10

Shape the fluted edge using a small floured ball of dough.

    11. 11

      Trim off any excess dough.

    12. 12

Line the dough with greaseproof paper and fill with dry beans.

    13. 13

Pre-bake the crust for 15 minutes.

    While the crust bakes

    1. 1

Roll out the remaining dough to about the size of the mould at 3mm thickness.

    2. 2

Cut strips approximately 1cm wide for the lattice top.

    3. 3

Remove the crust from the oven after 15 minutes and discard the beans (reserve for future baking).

    4. 4

Pour the banana filling into the crust and spread evenly.

    5. 5

Place the longest strip across the middle and press to secure one side.

    6. 6

Lay the remaining strips a little apart, lifting alternate strips to weave a lattice pattern.

    7. 7

Repeat weaving row by row until the lattice is complete.

    8. 8

Trim off any excess strip ends.

    9. 9

Brush the lattice with non-dairy milk.

    10. 10

Bake for 45 minutes or until the crust is golden.
