    Four o'clock tea is a fixed point in the Mauritian day. It is rarely just tea: there will be something fried, something sweet, and usually bread of some kind, laid out for whoever is in the house.

    What to serve with Mauritian tea

    The classic pairing is one savoury and one sweet: samoussas or gateaux piments beside napolitaine, biscuits or a slice of cake. Strong black tea with vanilla is the standard pour. Anything fried should come out of the pan no more than an hour before, or reheat it briefly in a hot oven.
