    Frying snacks properly at home

    Oil temperature decides everything. Too cool and fritters drink oil; too hot and the outside colours before the middle cooks. Test with a scrap of batter — it should rise and sizzle steadily rather than spit violently. Fry in small batches, drain on a rack rather than paper, and salt the moment they come out.
