Chicken Tikka

Unlike the similar named Chicken Tikka of the Indian Subcontinent, the Mauritian Chicken Tikka is made with flattened pieces of marinated chicken, crumbed and dipped in egg.
Ingredients
- 1 Pound Chicken breast Cut into Bite size
- Salt to taste
- Black pepper
- 2 Tbsp Briyani Spices
- 1 Tsp ginger paste
- 1 tsp garlic paste
- 1 Onion , crushed
- 6 Tbsp Plain yoghurt
- Homemade Briyani Spices:
- 1 Tsp Cumin Powder
- 1 Tsp Chilli Powder
- Pinch cloves Powder
- Pinch Cinnamon Powder
- Pinch Cardamoms powder
- 1/4 Garam Masala (Optional)
Preparation
- Put chicken breast cut into big chunks in a large bowl
- Season with salt and pepper
- Add 2 tbsp of briani spice
- Add 1 tsp of ginger paste
- Add 1 tsp of garlic paste
- Add 1 crushed onion
- Add 6 tbso of plain yogurt
- Mix well and allow to marinate for 3 hours
- Sprinkle dome breadcrumb over a pastic wrap
- Add the chicken pieces
- And sprinkle some breadcrumb on top
- Cover with plastic wrap
- Option 1: Use a meat hammer or meat mallet and flatten the chicken pieces
- Add some more breadcrumb to coat the chicken evenly
- Option 2: Use a rolling pin and flatten the chicken pieces
- Option 3: Flatten the chicken pieces using the palm of your hand and press it down into the breadcrumb
- Repeat the same process
- In a large mixing bowl, add 2 eggs and salt, whisk
- Add 1/4 cup of water
- Whisk until the eggs get foamy
- Heat oil in a frying pan over medium heat
- Dip the chicken into the beaten egg and deep fry it
