Cheese Fritters

Cheese fritter is a snack that Mauritians like to consume during picnics or other occasions. It is also very famous during the month of Ramadan.
Ingredients
- 500g bessan powder
- 1 pinch of baking soda
- ½ teaspoon baking powder
- ½ teaspoon cumin
- ¼ teaspoon pepper
- 1 large onion, finely chopped
- 4 chopped chilis
- ¼ cup chopped chives
- 1 cup coriander
- ½ teaspoon salt
- 250 ml of water
- A few pieces of cheese (cut into cubes)
- Oil
Preparation
- Pour bessan, salt, pepper, cumin, bicarbonate and baking powder in a large bowl and mix everything.
- Pour water gradually until you get a very soft and homogeneous paste.
- Mix vigorously, adding water if necessary, then leave for 10 minutes.
- Pour coriander, mint, peppers, onions and chopped chives in the batter and mix.
- Heat your pot over medium heat and pour in the oil.
- Add the pieces of cheese to the batter.
- Using a tablespoon take a small amount of your mixed dough and carefully place it in your pot for frying.
- Brown each side for about 2 min.
- Let drain before serving.
