    Party Food Recipes

Samoussas, fritters, platters and the big dishes that feed a full house.

Mauritian hospitality runs on volume. A birthday, a religious festival or a Sunday with visiting family all end the same way: several trays of fried snacks, a large pot of briani or noodles, and a table nobody leaves hungry from.

These recipes scale cleanly. Each one notes what can be prepared the day before and what has to be finished at the last minute, so you are not stuck in the kitchen while everyone else eats.

    Cooking ahead for a crowd

Fry snacks in the morning and reheat in a hot oven for eight minutes rather than frying twice. Rice dishes hold well covered in a low oven; noodles do not, so cook those last. Work out plates, serving spoons and where hot dishes will sit before you start cooking — that is what actually goes wrong on the day.
