    An island kitchen cooks a lot of fish. Mauritian seafood cooking is mostly quick — a whole fish grilled with garlic and chilli, prawns tossed with ginger, or a cari poisson finished in fifteen minutes once the masala base is ready. The exception is octopus, which rewards slow work.

    Buying and preparing fresh fish in Mauritius

    Buy early, look for clear eyes and firm flesh, and cook the same day. Octopus needs either long slow simmering or a spell in the freezer beforehand to tenderise. For vindaye, salt and dry the fish properly before frying, or the turmeric and mustard dressing will slide straight off.
