Mauritian Spiced Braised Beef (Boeuf Braisé)

    The braised beef literally melts in your mouth! Easy to prepare, it is a family dish par excellence, comforting and very tasty. It will delight the taste buds of both young and old.

    Ingredients

    • 1.2 kg Beef (venison or lamb), stewing pieces
    • Vegetable Oil
    • 1 Tablespoon Sesame Oil
    • 1 Large Onion, chopped
    • 5 Garlic cloves, peeled, halved, and germ removed
    • 10g Fresh Ginger, peeled and thinly sliced
    • 10 Cloves
    • 1 Cinnamon Stick
    • 1 Star Anise
    • 1 Teaspoon 5 Spice Powder
    • 2 Tablespoons Sugar
    • 3 Tablespoons Dark and Salty Soy Sauce
    • 3 Tablespoons Oyster Sauce
    • Salt & Pepper
    • Water (to cover the meat)

    Preparation

    1. Heat the sauté pan, add a drizzle of vegetable oil and the sesame oil.
    2. Sauté the onions, garlic, and ginger.
    3. Once everything has sweated well and the onions have colored, add the beef without stirring it too much. Salt and pepper well. Wait for it to brown nicely, then flip it so the other side cooks. Re-salt and pepper.
    4. Add the spices (cinnamon, cloves, star anise, 5 spice powder), sugar, oyster sauce, and soy sauce (as shown in the video).
    5. Cover well with water and let simmer over low heat for 3 hours. Do not hesitate to turn the meat in the sauce during cooking so that it absorbs the flavors. Once the sauce is absorbed, turn off the heat and let it cool. You can even refrigerate it and cut it the next day.
    6. The next day, first slice the meat with a sharp knife, then chop it. Do not think that the bottom of the pan is burned and ruined; deglaze with boiling water to recover the cooking juices, which will become the beef sauce. Add the chopped beef to it. Then enjoy with good mine bouilli (Chinese noodles cooked in water, fresh ones are even better), a fried egg, fresh chives as a topping, and a good satini pommes d'amour.
