Sautéed Pumpkin with Chilies, Mint And Honey

Ingredients:

500g of Pumpkin
4 tbspoons Virgin olive oil
4 Garlic cloves; thinly sliced
1 teaspoon Crushed red pepper
3 tbspoons Red wine vinegar
3 tbspoons Honey
3 tbspoons of chopped fresh mint leaves

Preparation:

Cut pumpkin slices into 2cm cubes.
In a pan heat olive oil until smoking.
Add pumpkin and garlic and cook until light golden-brown (about 4 to 5 minutes).
Add pepper, vinegar and honey and bring to boil.
Cook until liquid is reduced to syrup around pumpkin.
Remove from heat, add mint and serve.
