Ingredients:

4 1/4 cups self rising flour
1 cup whole wheat flour
1 2/3 cups cold water
2 tablespoons oil and more for the frying
a dash of salt
1 1/2 cups yellow split peas
3/4 tablespoon ground cumin
3 garlic cloves, crushed

Preparation:

1. place the dry ingredients into a bowl
2. add the water a little at a time until a soft dough forms
3. Make sure not to overwork dough
4. add oil to the dough and continue until it is completely smooth
5. put the dough in a plastic bag
6. place in the refrigerator and leave to rest for at least 120 minutes
7. put the split peas in a large pan, pour over water to cover and cook for about 10-15 minutes, until half cooked - they should be tender on the outside, but firm in the middle
8. allow water to evaporate during cooking, until pan is almost dry, while making sure to add extra water to prevent burning if necessary
9. Spread out the peas on a tray. When cool, grind to a paste, using a mortar and pestle or food processor. Mix with cumin and garlic
10. Serve
