The restaurant serves authentic Mauritian cuisine, prepared entirely in-house with locally sourced ingredients and produce from the site's organic garden. Dishes are thoughtfully plated and crafted to be both visually appealing and flavourful. Set within this living museum dedicated to the island's five centuries of sugar heritage, Le Fangourin complements the visitor experience by celebrating Mauritian gastronomic traditions through short supply chains and sustainable food practices.
