Tekwa is a delicious puffy golden brown fritter filled with a mixture of dhal. It is very common in Mauritius to have a tekwa with a nice cup of tea in the afternoon.

    1. 1

Wash and soak the dhal for at least 5 hours

    2. 2

Boil the dhal, adding 1 tbsp fennel seeds (gros anis) and a pinch of yellow food colour

    3. 3

Boil until soft and easy to crush with your finger

    4. 4

Drain, reserving the water for the dough, and let cool

    5. 5

Blend the drained dhal in a blender into a fine powder-like consistency

    6. 6

In a bowl, mix the blended dhal with 4 tbsp sugar and the desiccated coconut to make the filling

    7. 7

Combine 2 cups of the reserved boiled water with 4 tbsp sugar, 1 tbsp fennel seeds and vanilla essence

    8. 8

Sift 4 cups of flour into a large bowl

    9. 9

Combine the flour with 4 tbsp milk powder and 1 tsp baking powder

    10. 10

Add 3 tbsp unsalted butter and mix into the flour

    11. 11

Gradually pour in the boiled water mixture and knead into a soft dough

    12. 12

Shape the dough into lemon-size balls

    13. 13

Flatten each ball with your fingers, add 1 tbsp of filling in the middle, and pinch to seal

    14. 14

Roll into a tekwa shape about 10cm diameter, not as thin as roti

    15. 15

Deep fry over medium heat until golden brown on both sides
