Salted Fish Rougaille

To make a good salted fish rougaille is very simple. Salted fish is usually one of the things we grew up with and love.
Ingredients

- ATTENTION: do not salt this dish because the fish is already salty
- 250g of snoek fish
- 2 onions
- 1 teaspoon fresh thyme
- 6 caripoulé leaves
- 1 tsp garlic / ginger mixture
- 5 tomatoes
- 2 peppers
- oil
Method
- Preparation time: 10 minutes
- Cooking time: 20 Mins
- Chop the onions, chop the peppers lengthwise and same for the tomatoes.
- Quickly launder the fish to remove the excess salt.
- Fry the fish in two tablespoons of oil.
- Reduce the fish to pieces and remove the bones. Put the fish aside.
- In the same saucepan, sweat the onions, curry leaves and thyme for 1 minute over medium heat. Add the garlic / ginger mixture and the peppers. Cook for two minutes.
- Add the tomatoes and let simmer for 5 minutes. Add the salted fish to the sauce, let it simmer again. Sprinkle with coriander leaves before serving.
- Suggestion: Serve with hot faratas or with rice, brèdes and pickles
