Reunion Island Wrap with Lamb and Pork Curry

Here is a recipe that smells like the islands; Reunion and Mauritius. Wrap with lamb and pork, this recipe is very simple to make.
Ingredients
- 4 wraps
- 500 g lamb shoulder with bone
- 500 g pork neck (loin)
- 5 tablespoons olive oil
- 1 onion
- 1 apple
- 1 banana
- The juice of a lime
- A handful of raisins
- Spices :
- Colombo spices (1/2 teaspoons)
- Indian curry (a pinch, it's very strong)
- “Ordinary” Ducros type curry (1/2 teaspoon, to be rectified at the end of cooking)
- Star anise (star anise) powder (1/2 teaspoons)
- Cinnamon powder (1/2 teaspoon)
- Ginger powder (1/2 teaspoons)
- Salt (very light at the start, rectify before serving)
- Paprika (1/2 teaspoons)
- Laurel (some leaves)
- Cinnamon stick (1 stick)
- Cloves (2)
- Pepper
- Sauce :
- 2 Greek yogurts
- A few minced fresh mint leaves
Method
- Cut the meat into pieces, keep the bones for cooking.
- Peel / seed and cut the apple into pieces.
- Cut the banana into large slices.
- Heat the oil in a casserole dish. Add the meat and bone. Leave to color for a few minutes and add all the ingredients except the raisins, cover, and simmer over low heat for 2h (minimum round and gas minimum).
- Add the raisins 15 minutes before the end of cooking.
- Drip and adjust in curry and salt.
- Remove the cloves and bone.
- Moisten the wraps and heat 30 seconds in the microwave.
- Place the preparation on the wraps, and roll. Heat again in the microwave if necessary. It's ready !
- The sauce:
- mix the yogurt and the mint.
- Can be served with white rice as an accompaniment.
