Puri with Curd (Lait Caillé)

A fried unleavened Indian bread made from a combination of Lait Caillé and white flour, hot and crispy, especially at weddings.
Ingredients
- 1 cup all-purpose flour
- 250 ml Lait Caillé
- 2 tablespoons vegetable oil
- ½ cup water
- ¼ teaspoon bicarbonate of soda
- Vegetable oil for frying
- 1 teaspoon salt
- 1 tablespoon brown sugar
Method
- Mix the all-purpose flour with one teaspoon of salt, one teaspoon of brown sugar, 1 teaspoon of bicarbonate of soda, and one tablespoon of vegetable oil.
- Then add 250 ml of Lait Caillé to the dough.
- Furthermore, add a little water gradually and mix until the dough is soft.
- Knead the dough one last time and make small balls.
- Press each ball slowly with the palm of your hand.
- Then, flatten each ball of dough with a rolling pin (about 0.25 cm thick).
- In a pan, heat the oil over medium heat for frying.
- Then place each puri in the pan and let it cook one at a time.
- Remove the puri from the oil as soon as it inflates, flip it, and remove it immediately from the pan.
- Drain on paper towels to absorb excess oil.
