The napolitane- a unique Mauritian sweet treat. Sandwich 2 shortbread biscuits with a jam of your choice and top it off with a colourful sugary icing. This recipe is so easy to make, even the most amateur bakers will get it right.
Ingredients
- For the Cookies
- 2 Cups / 250g Plain Flour
- 1 Cup / 250g Unsalted Butter
- Chilli in the fridge for 20 minutes
- Filling:
- Add jam of your Choice
- For the Icing:
- 1 Cup /110g Icing Sugar / Powder Sugar
- 4 Tbsp Milk OR Water
- 1 drop Colouring of your choice
Method
- Rub 1 cup unsalted butter (250g) in 2 Cups plain flour (250g)
- Mix until a dough is formed
- Allow the dough to chill for 20 minutes in the fridge
- Roll the dough to 0.5 cm
- Cut the shapes of your choice
- Preheat oven 160c and bake for 7 minutes
- Spread some jam of your choice
- 1 cup icing sugar 110g
- 4 tbsp milk
- Add colour of your choice
- Mix
- Pour the icing on the cookies
- Allow to set for 1 hour
- Sprinkle some edible glitter on the top
