Macaroni Fricassee

    Though pasta isn’t exactly traditional local dish, Macaroni Fricasse adds a Mauritian spin on what would be a typically European dish.

    Ingredients

    • Oil for cooking
    • 1 Tbsp Butter
    • 1 Fillet boneless chicken breast cut into cube
    • Salt to taste
    • Black pepper
    • 1 Tsp Ginger and garlic paste
    • 1 Onion, Sliced
    • Thyme
    • 2 Tsp Ginger and garlic paste
    • 3 Red Chillies (Optional)
    • 1 Tomato, Roughly Chopped
    • 1/4 | 50 g Tin Chopped Tomato
    • About 3 Tbsp Water
    • 2 Tbsp Milk Or Cream
    • 1 1/2 cups | 300 g Pasta, Cooked and drained
    • Chopped parsley
    • Chopped Coriander
    • Grated cheese

    Method

    1. Heat some oil
    2. Add 1 fillet boneless chicken breast cut into cube
    3. Add salt to taste
    4. Add black pepper
    5. Add 1 tsp of giner and garlic paste
    6. Allow to cook
    7. Remove and keep aside
    8. In the same pan, add 1 onion, sliced and some thyme
    9. Add 2 tsp of garlic and ginger paste
    10. Add 3 red chillies (optional)
    11. Sauté for a few minutes
    12. Add 1 tomato roughly chopped
    13. Cook until the tomato is softened
    14. Add 1/4 tin of chopped tomato
    15. Season with salt and black pepper
    16. Break or mash the tomatoes with your spoon
    17. Add about 3 tbsp of water
    18. Cover abd allow to cook for 2-3 minutes
    19. 2-3 tbsp of milk or cream
    20. Add the cooked chicken
    21. Add 1 1/2 cups of pasta (cooked and drained)
    22. Add 1 tbsp of butter
    23. Garnish with chopped coriander and parsley
    24. Add grated cheese
