    Instructions

    1. 1

Wash the tuvar dal under running water three times to remove dust.

    2. 2

Soak the washed dal for at least 20 minutes.

    3. 3

Place the soaked dal in a pressure cooker with 2-2.5 cups water, 1/4 teaspoon turmeric powder and a pinch of asafoetida.

    4. 4

Pressure cook on medium heat for 6 whistles, about 2 minutes, then let the pressure release naturally.

    5. 5

Mash the cooked dal with a whisk or hand blender to the desired consistency.

    6. 6

Boil 2 cups of water separately, cover and set aside.

    7. 7

Heat ghee and oil in a pan and add cumin seeds until they change colour.

    8. 8

Add curry leaves and chopped garlic, saute until the garlic turns light golden.

    9. 9

Add the remaining turmeric powder, chopped green chillies and remaining asafoetida, mix well.

    10. 10

Add the mashed dal to the pan, mix and season with salt.

    11. 11

Pour in the boiled hot water, stir, cover and bring to a boil.

    12. 12

Stir in chopped coriander leaves and simmer briefly.

    13. 13

Taste and adjust salt as needed.

    14. 14

Pour the hot dal into a serving bowl, garnish with coriander leaves and green chilli, and serve hot with steamed rice.
