La Daube Poisson (Fish Stew)

Fish Stew (La Daube Poisson) is one of the favourite traditional seafood dishes in Mauritius. This recipe combines fish with onions, garlic, ginger, herbs, spices and tomatoes.
Ingredients
- 1 Kg Tuna Fish
- 1 Onion, diced
- Thyme
- 1 Tbsp Cumin Seeds
- 1 Tbsp Ginger and garlic paste
- 2 Tbsp Stew Spices
- 3 Tomatoes, diced
- Salt to taste
- Black Pepper
- Half tin of crushed Tomatoes
- Water
- Chillies
- Onions (diced)
- Fresh coriander leaves
Method
- Season fish with salt and pepper
- Heat some oil in a large thick-bottomed pot over medium heat
- Fry the fish for about 5-6 minutes on each side until they are golden brown
- Add some thyme to flavour the oil
- In the same pot, discard some oil, on medium heat, add the diced onion and cook for a few minutes until it softens
- Add 1 tbsp of cumin seeds
- Add 1 tbsp of ginger and garlic paste
- Add some thymeStir. Cover and let cook for 3 minutes
- Add 2 tbsp of spices for stew (daube)
- Add 3 tomatoes diced
- Stir. Cover and let cook for 5 minutes
- Add half tin of crushed tomato
- Season with salt and black pepper. Mix well
- Cover and let cook for 10-15 minutes
- Add water until the consistency of your liking
- Add the fish
- Add chillies
- Mix. Cover and let cook for another 5 minutes
- Turn off the heat. Garnish with fried onions and fresh coriander leaves
