Chinese cooking has been part of Mauritian food for well over a century, and the Sino-Mauritian version is its own cuisine: mine frite with a soy-dark edge, boulettes in clear broth, chicken with black bean, and the fried rice that turns up at every family gathering.
These recipes are written for a domestic gas hob rather than a restaurant burner, with the timing adjusted so you still get the smoky wok character at home.

Wok cooking without a restaurant burner
Prepare everything before the pan goes on — stir-frying gives you no time to chop. Heat the wok until it just starts to smoke, add oil, then cook in small batches. Sauces go in at the end, down the side of the hot pan rather than into the middle, so they reduce instantly instead of stewing the ingredients.
