Recipe Overview
Ojja is a Tunisian dish made from eggs, known for its ease of preparation. simple and fast, and super tasty! Ojja is a popular dish that is eaten with bread.
Recipe Ingredients
- 4 to 5 Merguez cut into sections (Sausage)
- 2 tbsp olive oil
- 1 tbsp tomato puree
- 1/2 medium onion
- 3 cloves of garlic
- 1/2 tsp caraway
- 1/2 tsp parsley
- harissa (optional)
- 1 tsp paprika
- Salt and pepper
- 1 fresh tomato, diced
- 1 bell pepper, sliced or diced
- 2 eggs
Instructions
- In a pan pour olive oil, the chopped onion and the crushed garlic and fry for a few minutes then add the tomato puree and the harissa and simmer for a few minutes then add the fresh tomato cut into small dice, merguez and spices.
- Add salt and pepper
- Simmer for ten minutes on a low heat then add a glass of water.
- When the merguez are cooked add the pepper and when the sauce becomes a little thick, break the eggs in the pan, cook for ten minutes without simmering, cover if you want hard-boiled eggs.
- Finally decorate with parsley and serve with good homemade bread!
