Recipe Ingredients

  • 4 to 5 Merguez cut into sections (Sausage)
  • 2 tbsp olive oil
  • 1 tbsp tomato puree
  • 1/2 medium onion
  • 3 cloves of garlic
  • 1/2 tsp caraway
  • 1/2 tsp parsley
  • harissa (optional)
  • 1 tsp paprika
  • Salt and pepper
  • 1 fresh tomato, diced
  • 1 bell pepper, sliced ​​or diced
  • 2 eggs

Instructions

  • In a pan pour olive oil, the chopped onion and the crushed garlic and fry for a few minutes then add the tomato puree and the harissa and simmer for a few minutes then add the fresh tomato cut into small dice, merguez and spices.
  • Add salt and pepper
  • Simmer for ten minutes on a low heat then add a glass of water.
  • When the merguez are cooked add the pepper and when the sauce becomes a little thick, break the eggs in the pan, cook for ten minutes without simmering, cover if you want hard-boiled eggs.
  • Finally decorate with parsley and serve with good homemade bread!
