Recipe Overview
Tekwa is a delicious puffy golden brown fritter filled with a mixture of dhal. It is very common in Mauritius to have a tekwa with a nice cup of tea in the afternoon.
Recipe Ingredients
- 200g Chana Dhal (Dhal Gramme)
- 4 Cups All Purpose Flour
- Fennel Seeds (Gros Anis)
- Yellow Food Colour
- Sugar
- Oil
- 3 Tbsp Unsalted Butter
- Vanilla Essence
- 5 Tbsp Desiccated Coconut
- 4 Tbsp Milk Powder
Instructions
- Wash and soak dhal for atleast 5 hours
- Boil dhal adding 1 tbsp of fennel seeds (gros anis) and a pinch of yellow food colour
- Boil until soft, easy to crush with your finger
- Drain, reserving the water for the dough and allow to cool
- Blend the dhal in a blender into a fine powder like consistency
- Mix with 4 tbsp of sugar and desiccated coconut
- Combine 2 cups of boiled water with 4 tbsp of sugar, 1 tbsp of fennel seeds and vanilla essence
- Sift 4 cups of flour
- Combine with 4 tbsp of milk powder and 1 tsp of baking powder
- Add 3 tbsp of unsalted butter
- Gradually pour the boiled water and knead the flour until you get a soft dough
- Shape into small size balls
- Flatten with your fingers, add 1 tbsp filling in the middle and seal the dough
- Roll into thick tekwa size (about 10cm diameter)
- Deep fry over medium heat until golden brown in colour
