Suji (Semolina Halwa) Recipe


Recipe Overview

Semolina/ Suji Halwa is a classic indian semolina pudding made with ghee and dry fruits. It is a traditional but popular sweet dish in Mauritius.

Recipe Ingredients

  • 3 Cups Semolina (gréo) 500g
  • 1.5 Cup Sugar
  • 1.5 Cup Milk Powder
  • 6 Tbsp Ghee (clarified Butter)
  • 1 Tsp Cardamom
  • 2 Cinnamon Sticks
  • Yellow Food Colour (optional)
  • 1 Tbsp Vanilla Essence
  • Dry Raisins
  • Sliced Almonds

Instructions

  • Dissolve 1.5 cup of sugar and 1.5 cup of milk powder in 3 cups of water
  • Add 1 tbsp of vanilla essence and a pinch of yellow food colour
  • Mix well and set aside
  • Heat 1 tbsp of ghee over medium low heat in a cast iron wok
  • Add semolina and mix together
  • Keep stirring and roast over medium low heat for 7 minutes
  • Remove and set aside
  • Heat 4 tbsp of ghee in the cast iron wok over medium high heat
  • Add raisins, cinnamon sticks, cardamoms and sliced almonds
  • Fry for 1 minute and add the roasted semolina
  • Mix to combine and add liquid milk
  • Keep stirring over medium high heat until water is dried and halwa texture is formed (about 5 minutes)
  • Finally melt 1 tbsp of ghee on the halwa and mix together
  • Serve, garnished with the almonds.
