Recipe Overview
Semolina/ Suji Halwa is a classic indian semolina pudding made with ghee and dry fruits. It is a traditional but popular sweet dish in Mauritius.
Recipe Ingredients
- 3 Cups Semolina (gréo) 500g
- 1.5 Cup Sugar
- 1.5 Cup Milk Powder
- 6 Tbsp Ghee (clarified Butter)
- 1 Tsp Cardamom
- 2 Cinnamon Sticks
- Yellow Food Colour (optional)
- 1 Tbsp Vanilla Essence
- Dry Raisins
- Sliced Almonds
Instructions
- Dissolve 1.5 cup of sugar and 1.5 cup of milk powder in 3 cups of water
- Add 1 tbsp of vanilla essence and a pinch of yellow food colour
- Mix well and set aside
- Heat 1 tbsp of ghee over medium low heat in a cast iron wok
- Add semolina and mix together
- Keep stirring and roast over medium low heat for 7 minutes
- Remove and set aside
- Heat 4 tbsp of ghee in the cast iron wok over medium high heat
- Add raisins, cinnamon sticks, cardamoms and sliced almonds
- Fry for 1 minute and add the roasted semolina
- Mix to combine and add liquid milk
- Keep stirring over medium high heat until water is dried and halwa texture is formed (about 5 minutes)
- Finally melt 1 tbsp of ghee on the halwa and mix together
- Serve, garnished with the almonds.
