Sardine Fritters with Parsley Recipe

Recipe Overview

Some prefer barbecue sardines while others prefer them fried. The sardine fritters can be served as an aperitif or as a main dish.

Recipe Ingredients

  • 2 kg of sardines
  • 300g flour
  • 3 eggs
  • ½ tea glass of oil
  • Salt pepper
  • ¼ tsp baking powder
  • 2 tsp chopped parsley
  • ½ tsp curry
  • Oil for frying

Instructions

  • Clean the sardines by removing the bones.
  • Mix the flour with salt, pepper, curry, oil, yeast and eggs in a bowl until you get a runny dough (like pancake batter).
  • Heat the oil. Dip the sardines in the batter.
  • Glue them two by two then fry them in hot oil.
  • Put the sardine fritters in a paper towel.
  • Sprinkle with parsley then serve.
