Recipe Overview

Pulao is of Persian origin, it is a dish made of rice with vegetables or chicken, embellished with a tasty mix of many spices. This dish is a classic of Indian cuisine, with many regional or family variants.

Recipe Ingredients

  • 300 g of chicken breasts
  • 300 g sausages cut into bevels
  • 1 tbsp of garlic and ginger paste
  • 1 minced onion
  • 4 cloves
  • 4 seeds of cardamom
  • 1 cinnamon stick
  • 1 tbsp of ground cumin
  • 1 tbsp of turmeric
  • Salt pepper
  • Some chopped mint leaves
  • Fresh chilled coriander
  • Basmati rice half cooked
  • 1 tbsp of ghee (or butter)

Instructions

  • Cut the chicken into small pieces, salt and pepper.
  • Marinate with cinnamon, cardamom, cumin, cloves, turmeric, garlic and ginger paste, mint and a handful of coriander.
  • Let sit a few minutes.
  • Saute the sausages.
  • Then saute the onion in a little oil until golden brown.
  • Fry the chicken in a little oil and a little butter and once it is cooked, set aside.
  • Add a layer of rice to the remaining chicken, then put a layer of chicken, then rice, then chicken again, end with onions and sausages and sprinkle with fresh coriander.
  • Add a little water in the preparation, cover and cook for 10 to 15 minutes over low heat, so that all the perfumes are well diffused.
  • Once cooked, serve the Pulao with tomato chutney.
