Recipe Overview
Preserved chili is a favorite of Mauritians. The perfect accompaniment for a sardine salad. Very common in street food stalls in Mauritius.
Recipe Ingredients
- Fresh Chilis
- Salt
- White vinegar
- jars
The preserved chili can be served with any dish.
Instructions
- Use fresh green chilis
- Wash and drain chilis
- Remove the stem from each chili, avoid touching eyes or other sensitive part of the body
- Sterilize jars and lids by washing them in boiling water
- Carefully stack the chilis 2/3 of the jars
- Add the salt
- Shake the jars to let the salt flow between the chilis
- Pour the white vinegar in small quantities, until the jar is completely filled
- Close the covers carefully
- Place the jars in a sunny place for a week to allow the chilis to macerate
