Preserved Chili (pima confit) Recipe


Recipe Overview

Preserved chili is a favorite of Mauritians. The perfect accompaniment for a sardine salad. Very common in street food stalls in Mauritius.

Recipe Ingredients

  • Fresh Chilis
  • Salt
  • White vinegar
  • jars

The preserved chili can be served with any dish.

Instructions

  • Use fresh green chilis
  • Wash and drain chilis
  • Remove the stem from each chili, avoid touching eyes or other sensitive part of the body
  • Sterilize jars and lids by washing them in boiling water
  • Carefully stack the chilis 2/3 of the jars
  • Add the salt
  • Shake the jars to let the salt flow between the chilis
  • Pour the white vinegar in small quantities, until the jar is completely filled
  • Close the covers carefully
  • Place the jars in a sunny place for a week to allow the chilis to macerate
