Kutcha Mangue (Mango Kutcha) Recipe


Recipe Overview

Kutcha is very famous in our traditional Mauritian food. It is a kind of mango pickle where raw green mangoes are peeled and grated. It is then used as an accompaniment with rice dishes or sometimes as a filling for bread. Instead of grated mango, crushed small pieces can be used.

Recipe Ingredients

  • Green Mango
  • Salt and Sugar
  • Olive or Vegetable Oil
  • Green Chilli
  • Garlic
  • Achard Spices (mustard seeds and tumeric powder)

Instructions

  1. Peel green mango and garlic
  2. Coarsely grate mangoes
  3. Add salt and sugar, mix well and leave for 10 minutes
  4. Squeeze and dry mango and save in different bowl
  5. Finely grate garlic
  6. Achard Spices (use tumeric and mustard seeds if not available)
  7. Olive Oil
  8. Mix and season with chopped green chilli
