Recipe Overview
Polenta Pudding or more precisely known as Poudine Mais in Mauritius is yet another famous sweet treat that Mauritians really relish for. It is easy to make as well as cheap, and often served as tea time snack for Mauritians.
Recipe Ingredients
- 225g Cornmeal
- 2 1/2 Cups Water
- 3/4 Cup 170g Sugar
- 3/4 Cup Milk Powder
- 2 Tbsp Vanilla Essence
- Pinch of Yellow Food Colouring
- 2 Tbsp Instant Custard Powder
- Sultanas / Dry Raisins (Optional)
- Shredded of Coconut for topping
Instructions
- Pour the cornmeal in a deep saucepan, add 2 1/2 cups of water, 3/4 cup of sugar and 3/4 cup of milk powder
- Stir continuously on medium low heat
- Add 2 tbsp of vanilla essence
- Add a pinch of yellow food colour
- Add 2 tbsp of instant custard powder
- Add raisins (optional)
- Stir constantly so that the mixture does not stick at the bottom of the pan and does not burn
- Turn off the heat as the milk evaporates and the mixture thickens
- Grease your tray or mould with butter
- Pour in the mixture
- Garnish shredded coconut
- Refrigerate until the pudding is set
- Cut into desired shapes
