Recipe Overview
Though pasta isn’t exactly traditional local dish, Macaroni Fricasse adds a Mauritian spin on what would be a typically European dish. This quick meal is perfect for large groups or for the kids.
Recipe Ingredients
- Oil for cooking
- 1 Tbsp Butter
- 1 Fillet boneless chicken breast cut into cube
- Salt to taste
- Black pepper
- 1 Tsp Ginger and garlic paste
- 1 Onion, Sliced
- Thyme
- 2 Tsp Ginger and garlic paste
- 3 Red Chillies (Optional)
- 1 Tomato, Roughly Chopped
- 1/4 | 50 g Tin Chopped Tomato
- About 3 Tbsp Water
- 2 Tbsp Milk Or Cream
- 1 1/2 cups | 300 g Pasta, Cooked and drained
- Chopped parsley
- Chopped Coriander
- Grated cheese
Instructions
- Heat some oil
- Add 1 fillet boneless chicken breast cut into cube
- Add salt to taste
- Add black pepper
- Add 1 tsp of giner and garlic paste
- Allow to cook
- Remove and keep aside
- In the same pan, add 1 onion, sliced and some thyme
- Add 2 tsp of garlic and ginger paste
- Add 3 red chillies (optional)
- Sauté for a few minutes
- Add 1 tomato roughly chopped
- Cook until the tomato is softened
- Add 1/4 tin of chopped tomato
- Season with salt and black pepper
- Break or mash the tomatoes with your spoon
- Add about 3 tbsp of water
- Cover abd allow to cook for 2-3 minutes
- 2-3 tbsp of milk or cream
- Add the cooked chicken
- Add 1 1/2 cups of pasta (cooked and drained)
- Add 1 tbsp of butter
- Garnish with chopped coriander and parsley
- Add grated cheese
