Macaroni Fricassee Recipe


Recipe Overview

Though pasta isn’t exactly traditional local dish, Macaroni Fricasse adds a Mauritian spin on what would be a typically European dish. This quick meal is perfect for large groups or for the kids.

Recipe Ingredients

  • Oil for cooking
  • 1 Tbsp Butter
  • 1 Fillet boneless chicken breast cut into cube
  • Salt to taste
  • Black pepper
  • 1 Tsp Ginger and garlic paste
  • 1 Onion, Sliced
  • Thyme
  • 2 Tsp Ginger and garlic paste
  • 3 Red Chillies (Optional)
  • 1 Tomato, Roughly Chopped
  • 1/4 | 50 g Tin Chopped Tomato
  • About 3 Tbsp Water
  • 2 Tbsp Milk Or Cream
  • 1 1/2 cups | 300 g Pasta, Cooked and drained
  • Chopped parsley
  • Chopped Coriander
  • Grated cheese

Instructions

  • Heat some oil
  • Add 1 fillet boneless chicken breast cut into cube
  • Add salt to taste
  • Add black pepper
  • Add 1 tsp of giner and garlic paste
  • Allow to cook
  • Remove and keep aside
  • In the same pan, add 1 onion, sliced and some thyme
  • Add 2 tsp of garlic and ginger paste
  • Add 3 red chillies (optional)
  • Sauté for a few minutes
  • Add 1 tomato roughly chopped
  • Cook until the tomato is softened
  • Add 1/4 tin of chopped tomato
  • Season with salt and black pepper
  • Break or mash the tomatoes with your spoon
  • Add about 3 tbsp of water
  • Cover abd allow to cook for 2-3 minutes
  • 2-3 tbsp of milk or cream
  • Add the cooked chicken
  • Add 1 1/2 cups of pasta (cooked and drained)
  • Add 1 tbsp of butter
  • Garnish with chopped coriander and parsley
  • Add grated cheese
