Fried Noodles – Recipe


Recipe Overview

The “Mine Frire”- Fried noodles - is a rather easy recipe and above all can vary with different meats and ingredients, depending on your taste and wants. The dish is basically stir fry noodles topped with ingredients which are all well-seasoned with Chinese dark and fish sauce. It is a re-invented Chinese dish that can be made within minutes. Fried noodles remains one of the favourite foods in Mauritius and you will find it in almost all restaurants, hotels or villas. It is also a very common street food.

Recipe Ingredients

Ingredients ( 1 serving):

For The Chicken:

  • 2 Fillets Skinless Boneless Chicken Breast Cut Into Cube
  • Salt To Taste
  • Black Pepper
  • 1 Tbsp Dark Soy Sauce
  • 1 Tbsp Oyster Sauce
  • 1 Tsp Rice Wine Vinegar
  • 1 Tsp Fish Sauce
  • 1 Tsp Sesame Oil
  • Oil For Cooking

Fried Noodles:

  • Oil For Cooking
  • 1 Portion Of Noddle 150 G ( For 1 Serving )
  • 1 Handful Of Shredded Cabbage
  • 1 Handful Of Carrot Cut Into Matchsticks
  • Spring Onion
  • Some Garlic Chives (La Queue L'ail)
  • 2 Eggs (optional) For Garnishing
  • 1 Tbsp Dark Soy Sauce
  • 2 Tbsp Oyster Sauce
  • 1 Tsp Of Rice Wine Vinegar
  • 2 Tsp Of Fish Sauce
  • 1 Tsp Of Sesame Oil
  • Black Pepper
  • Garlic Sauce - Depending Of Your Liking
  • 1 Handful Bok Choy| Pak Choi

*** Add Bean Sprout If You Have

Instructions

  • Heat A Wok With Some Oil In It
  • Add The Chicken And Season With Salt And Black Pepper. Allow To Cook For A Few Minutes
  • Add Dark Soy Sauce, Oyster Sauce, Sesame Oil, Fish Sauce And Rice Wine Vinegar To The Chicken
  • Stir Fry Until Cooked And Keep Aside
  • Heat The Same Woke With Some Oil In It
  • Add Carrot And Shredded Cabbage With Some Garlic Chives
  • Stir Fry For 1 Minute
  • Add 1 Portion Of Noodle 150g (for 1 Serving)
  • Flavour The Noodles With Dark Soy Sauce, Oyster Sauce, Fish Sauce, Sesame Oil, Rice Wine Vinegar And Black Pepper
  • Stir Fry For A Few Mins
  • Add 1 Handful Of Bok Choy
  • Add The Cooked Chicken
  • Add Spring Onion
  • Add Some Garlic Sauce
  • Stir Fry The Whole Mixture Until Cooked
  • At The End, Sprinkle With Chives And Egg Strips
