Recipe Overview
Usually made from rice flour and water, Bee Hoon is used in various forms throughout Asia. Known as Meefoon in Mauritius, they are a great alternative to noodles and are much lighter!
Recipe Ingredients
- 200 g rice vermicelli (meefoon)
- 1 boneless chicken
- 2 carrots
- 50 g of "bréde de chine"
- 50 g of soy sprouts
- 6 large shrimps
- 2 sweet sausage
- 6 branches of spring onion
- 1 egg
- soya sauce
- pepper
Instructions
- In a large bowl of hot water soak the meefoon for 10 to 15 minutes (until softened), drain and set aside.
- Meanwhile, peel and cut the carrots into sticks, wash and chop the spring onion.
- Cut the chicken into slices and cut the shrimps in half.
- Heat a wok with a little oil and add cook the chicken for 5 minutes and set aside.
- Saute the shrimp and sausage at the same time in the same wok for 5 minutes and set aside.
- Brown the carrots for 5 minutes then add the soy sprouts and the brèdes. Add chicken, shrimp, sausage, soy sauce, onion tail and pepper and mix.
- Add the egg and mix well. Then add the meefoon and mix with all the rest so that the meefoon is mixed with all the ingredients.
- Cook for another 3 minutes.
- Serve with garlic sauce and chili paste.
