Recipe Overview
Vindaye is a typically Mauritian dish that prides itself not only on its flavours but also on its versatility. The mustard based, spicy dish can be combined with various ingredients including seafood, vegetables and meat. This delicious Chicken Vindaye makes a wonderful accompaniment with roti or bread.
Recipe Ingredients
- 500g boneless chicken cut into pieces
- 2 tbsp turmeric powder
- 1 tbsp mustard seed powder
- Green chili and garlic
- Ginger and garlic paste
- Salt and pepper
- Vegetable oil and vinegar
- 3 onions
Instructions
- Mix chicken with 1 tsp turmeric, 1 tbsp garlic and ginger paste, salt and pepper
- Fry lightly on medium heat pan
- Cut onions into big pieces and soak in vinegar for 10 mins
- Pour and mix ½ cup of water with 1 tbsp turmeric powder and 1 tbsp mustard seed powder
- Cut garlic into pan on medium heat. Add turmeric and mustard paste
- Add chicken and cook for 10-15 mins
- Add soaked onions, green chilies and 1 tbsp of soaked onion vinegar
