Kalia Poulet (Chicken Kalia) Recipe


Recipe Overview

Chicken Kalia, is a chicken curry from Mauritius that is prepared with yoghurt and lots of spices. Don’t hold back on the spices, even if some some of the quantities might seem rather a lot. This dish is best served with plain white rice or cumin rice or rotis. You can accompany it with mixed salads, pickles, chatini or chilli.

Recipe Ingredients

Homemade Briyani Spices:
  • 1 Tbsp Cumin Powder
  • 1 Tbsp Chilli Powder
  • 1/2 Tsp Cloves Powder
  • 1 Tsp Cinnamon Powder
  • 1 Tsp Tumeric Powder
  • 1/4 Tsp Cardamoms Powder
  • 1/2 Tsp Garam Masala (Optional)
  • 1/2 Tsp Black Pepper
  • 1 Tbsp Garlic Powder
  • 1 Tbsp Ginger Powder
  • Roast Cumin Seeds
Chicken Marination:
    • 1 1/2 Onions
    • 2 Tomatoes, blended
    • 1 Handful Coriander Leaves
    • 1 Handful Mint Leaves
    • 1 Whole Chicken, cut into pieces
    • 1/2 Cup |125g Yoghurt
    • 1 Tbsp Ginger and Garlic Paste
    • 2 Tbsp Briyani Spices
    • 1 Tbsp Cumin Powder
    • 1 Handful Coriander Leaves, chopped
    • 1 Handful Mint Leaves, chopped
    • 2 Handful Fried Onions
    • 2 Chillies
    • 2 Large Potatoes, cut into cubes and salted
    • 1 Cinnamon Stick
    • 5 Cardamoms
    • 5 Cloves
    • 1 Tbsp Cumin Seeds
    • A few Saffron Threads
    • 1/3 Cup| 75ml Water (depending on how much gravy you want and how running or thick you want it to be)
    • 1 Tsp Ghee
    • Hard Boiled Eggs (Completely Optional)
    • Peas
    • Coriander, Mint and Fried Onion for garnish
    • Marinate for the Chicken atleast for a few hours before cooking, for best flavour
    • 2 Large Potatoes, cut into cubes and salted and fry it until golden brown and crispy

Instructions

  • Blend 1 ½ onions, 2 tomatoes and 1 handful of coriander
  • Mix chicken, yoghurt, ginger and garlic paste, 2 tbsp briyani spices, 1tbsp cumin powder, coriander and mint, 1 handful mint.
  • Add in handfuls of onions and blended mixture and stir
  • Allow to marinate for 2-3 hrs
  • Fry 2 large potatoes cut into pieces until golden brown
  • Remove some oil then fry cinnamon sticks with cumin seeds, cloves and cardamoms
  • Add chicken pieces to the pan and let fry on medium heat
  • Add ⅓ cup of water and a few saffron seeds
  • Add salt to taste
  • Add 1tsp ghee and uncover cooker for 5mins
  • Add potatoes and peas to mixture
  • Hard boiled eggs to mixture (optional)
  • Garnish with coriander, mint and fried onion
