Recipe Overview
Inspired by the classic French recipe, this dish has a Mauritian twist. Neither a stew nor a sauté, the Chicken Fricassee is a comforting dish for the whole family. Its mild flavours come together wonderfully when paired with rice or bread.
Recipe Ingredients
For 6-7 servings
- 1 Whole Chicken, Cut into pieces
- Black Pepper
- Salt to taste
- 1 Tsp Ginger and Garlic paste
- 1 Tsp Chilli Flakes
- Marinate for 1-2 Hours for best result
- 1 Big Sliced Onion
- 4 Chillies (Adjust to your heat)
- 1 Thyme
- 1 Tsp Ginger and garlic paste
- 2 Diced Tomatoes
Garnish with Coriander
Instructions
- Add 1 whole chicken cut into pieces into a large bowl
- Season with salt and black pepper
- Add 1 tsp of ginger and garlic paste
- Add 1 tsp of chilli flakes
- Marinate for 1-2 hours
- Heat some oil over medium heat
- Sear the chicken for a few minutes
- Remove and keep aside
- Add half sliced onion to the same pan with some oil
- Add some thymes, 2 green chillies
- Add 1 tsp of ginger and garlic paste
- Cook for a few minutes
- Add the chicken and mix well
- Cover and let cook for 10 minutes
- After 10 minutes, add 2 diced tomatoes
- Cover and let cook for another 5 minutes
- Cook uncovered until the liquid evaporates
- Add 2 green chillies (optional)
- Add half sliced onion
- Cook for 2 minutes
- Turn off the heat
- Garnish with fresh coriander
