Chayote Gratin with Potatoes Recipe


Recipe Overview

The chayote gratin is a classic from Reunion cuisine that we love a lot in Mauritius. This dish consists of a mixture of chayote, cheese and baked potatoes.

Recipe Ingredients

Ingredients: For 4 persons
  • 2 chayotes
  • 4 medium sized potatoes
  • 1 onion
  • 1 teaspoon fresh thyme
  • 1 tablespoon garlic / ginger mixture
  • 1 egg yolk
  • 1 tablespoon flour
  • 3 tablespoons of milk
  • 6 tablespoons grated cheddar cheese
  • salt
  • Breadcrumbs

Instructions

Preparation time: 5 minutes Cooking time: 30 minutes
  1. Cook potatoes and chayotes in salt water. Peel and puree with a fork.
  2. Chop the onions and dissolve the flour in the milk.
  3. Sweat the onions, add the thyme and the garlic / ginger mixture. When the onions turn translucent, reduce the heat and add the mashed potato and potatoes.
  4. Add the egg yolk and mix quickly. Bind with the flour-milk mixture.
  5. Add 3 tablespoons cheddar and let melt.
  6. Pour this mixture into a baking dish, sprinkle with cheddar cheese and bread crumbs. Let brown for 5 minutes in the oven at 180 ° C.

Suggestion: Serve with sauteed chicken with Chinese brède and bread.

Variation: This recipe is also excellent with giraumon or with pastries.
