Recipe Overview
If you like Chinese and Sino-Mauritian cuisine, this dish is a must. This version is very easy to make at home and full of flavors.
Recipe Ingredients
- 1 cup Rice
- 2 cup of water
- 1 kg chicken breast
- 2 eggs
- 1/2 cup canned corn
- 1/2 cup canned peas
- 2 tbsp soy sauce
- Oil
- Salt & pepper
- Garlic and ginger paste
- Carrots
Instructions
- Cook the rice.
- Cut the chicken breast into small cubes. Marinate them in a little soy sauce, while preparing the other ingredients.
- Wash, peel and cut the carrot into cubes.
- Mix salt and pepper in a small pot and set aside.
- Beat the eggs add a pinch of the salt / pepper mixture. Heat a skillet, add some oil and cook the eggs like an omelette. When the omelet is cooked, cut into small cubes and set aside.
- In the same pan put some oil and fry the chicken with a pinch of the salt / pepper mixture.
- Again in the same pan, add some oil and then saute the peas and the corn adding a little salt / pepper mixture and set aside.
- Do the same with the pieces of carrots.
- Once the rice is ready, move to the assembly of the dish. In a wok, add a little oil then add a large spoon of rice, a large spoon of each ingredients (chicken, carrots, peas, corn and eggs), a pinch of the salt / pepper mixture and a little soy sauce. Mix and stir fry for a few minutes. Pour into a large container.
- Repeat the process until all the ingredients are used, taking care to stir thoroughly with each new portion added to the container, to obtain a uniform seasoning on the whole dish.
- Serve with a tomato chutney or garlic sauce.
