Mine Bouilli Poulet (Boiled Noodles with Chicken) Recipe

Mine Bouillie ”Noodles Broth ” is the talk of the town really here in Mauritius. Being among the most popular Street Food/Snack and quick grab of the day meal.

Recipe Ingredients

For Chicken
  • 1/4 Cup / 30g Chicken Breast, Cubed
  • 1/2 Tsp Fish Sauce
  • 1/2 Tsp Sesame Oil
  • 1/2 Tsp Light Soy Sauce
  • Salt to taste
  • Black Pepper
  • 1 Tsp Garlic Paste
  • Oil
  • 1/2 Tsp Dark Soy Sauce
Boiled Noodle
  • Fresh Noodle
  • Bring water to boil with 1 Tbsp of salt for 2 Minutes

(IF FRESH NOODLE AREN'T AVAILABLE, YOU CAN SIMPLY USE DRY NOODLE, BOIL FOR 5 MINUTES)

Sautéed Bean Sprouts
  • 1 Cup/ 100g Bean Sprouts, Washed and Cleaned
  • 1/2 Tsp Garlic Paste
  • 1/4 Tsp Ginger Paste
  • Oil
  • Spring Onion
  • 1/2 Tsp Light Soy Sauce

Instructions

  • In a bowl marinate the chicken with 1/2 tsp of fish sauce, 1/2 tsp of sesame oil, 1/2 tsp of light soy sauce, 1 tsp of garlic paste, a pinch of salt and black pepper
  • Heat a pan and add a little oil
  • Add 1/2 tsp of garlic paste, 1/4 tsp of ginger paste, 1 cup of bean sprout (100g) to the pan
  • Sauté for a few minutes
  • Add spring onions and 1/2 tsp of light soy sauce. Reserve
  • Heat some oil and add the marinated chicken with 1/2 tsp of dark soy sauce. Let cook.
  • Bring water to boil with 1 tbsp of salt
  • Add the noodle and let boil for 2 minutes. Drain and put aside.
  • Add 1 laddle of the cooking water to the noodle with some garlic sauce, fish sauce, sesame oil and light soy sauce. Mix
  • Add black pepper, the sautéed bean sprouts, chicken, sprinkle some chopped spring onions and fried egg. Serve
