Recipe Overview
One of Mauritians' favorite desserts, kulfi malai is made of very rich ice cream made from milk.
Recipe Ingredients
For 4 persons or 8 (depending on the size of cups)
Coconut base
- 250g of mascarpone
- 20cl of whole milk
- 250g icing sugar
- 250g grated coconut
Kulfi Malai
- 2 tablespoons pistachio paste
- 1 tablespoon white almond puree
- 1 teaspoon of cardamom
Pink Coconut
- 1 tablespoon of rose syrup
Vanilla Coconut
- 1 teaspoon of vanilla essence
- 1 tablespoon grated coconut
Instructions
- In a bowl, add the mascarpone and the sugar, whisk them manually to relax the mascapone.
- Stir in the milk gradually while continuing to mix with the whisk.
- Then add the coconut.
- Divide the apparatus into three parts more or less equal in three different containers. Weigh it before proceeding.
- Add the extra ingredients to make the different flavors.
- In plastic cups, divide the mixtures.
- Put in the freezer and allow to take at least one whole night.
- To remove from mould, slide a knife around each ice, at worst the plastic cup will crack and break.
