1 liter pure cow milk
1 to 2 tablespoons lemon juice
1/2 teaspoon flour (optional)
400g sugar
1/2 litre whey water
1/4 teaspoon cardamom powder
rose water for flavoring


1. Bring fresh milk to the boil. Sprinkle over lemon juice and remove from heat as soon as milk curdles.
2. Tie remaining white mass in a cloth and squeeze out remaining liquid.
3. Put the white mass in a bowl with the flour, hang to dry until a smooth mixture is obtained. Then, shape the mixture into small balls.
4. Make syrup. Bring sugar and water to boil. Flavor with powdered cardamoms. Boil until mixture thickens down.
5. Put in milk balls, reduce heat and allow simmering until Rasgulla become soft and will absorb some of the syrup.
6. Cool and flavor with rose water.
