Cooked rice - 800 grm
1 Green capsicum
1 Red capsicum
Bamboo shoots - 100 grm
2 Eggs
2 Spring onions
Shredded Chicken -1/2 cup
Salt - 2 teaspoon
Oil - 4 tablespoon
Soy sauce - 1 tablespoon
1. Cut the green and red peppers and the bamboo shoots into small cubes.
2. Lightly beat the eggs with about half of the spring onions and a pinch of salt.
3. Heat about 2 tablespoon of oil in a pan.
4. Add the beaten eggs and scramble until set. Keep it aside.
5. Cook chicken with some water, pepper powder and salt till it become tender. Keep it aside 6. Heat the remaining oil.
7. Add the rest of the spring onions followed by all the vegetables and chicken and stir-fry, until each piece is covered with oil. 8. Add the cooked rice along with salt and stir to separate each grain of rice.
9. Finally, add the soy sauce and scrambled eggs.
10. Mix everything together.
