1 tablespoon coconut oil
2 large onions, sliced
1 cup uncooked basmati rice
1 head broccoli florets, sliced
3 stalks celery, sliced
1 red bell pepper, chopped
1/3 (about 150g) package tofu, cubed
1/2 cup of cashews
1 tablespoon green curry paste
1/2 cup korma sauce
1 teaspoon of salt
1 teaspoon of pepper
2 teaspoons lemon juice
1. Heat the coconut oil in a large pan over medium heat and add to the pan.
2. While the onion is cooking, put the rice on to cook according to package directions.
3. Add to the pan the broccoli florets, celery and bed pepper.
4. Cook the vegetables until tender.
5. Add the vegetarian Korma and the green curry paste and stir gently.
6. Add the Tofu to the pan.
7. Add cashews; stir gently until tofu and cashews are coated with sauce.
8. Season with thr salt and pepper. Add more if needed.
9. Remove from heat, add lemon juice and serve!
