2 tablespoons ghee
1 1/2 big red bell peppers, sliced
6 green onions, sliced
3 cloves, sliced
850 grams sliced cooked chicken
1 cup breadcrumbs or flour
2 eggs, beaten
2 tablespoons mayonnaise
1 1/2 tablespoon mustard
2 teaspoons veggie seasoning
1/4 cup vegetable oil
Creole Sauce
1. Melt butter in a large pan over medium heat.
2. Add the pepper, onions, and garlic, and stir until vegetables are tender.
3. Add the chicken, breadcrumbs, eggs, mayo, mustered and seasoning. Shape chicken mixture into 8 (3 1/2-inch) patties.
4. Fry 4 patties in 2 tablespoons hot oil in a large pan over medium heat 3 minutes on each side or until golden brown. Drain on paper towels.
5. Repeat procedure with remaining 2 tablespoons oil and patties. Serve immediately, recommended with Creole Sauce.
